Ah, avocado! Just about the most perfect food, if you ask me. Creamy, delicious, versatile, and oh so good for you. In just half an avocado you have 15 grams of healthy fat, 2 grams of protein, 9 grams of total carbohydrate with 7 grams of fiber (that's 2 grams of net carbs for those of you counting), 14% of your RDI of potassium, as well as vitamin C, B6, B5, E, folate, and magnesium. I recently asked the ladies in my Clarity Wellness Facebook Group about their favorite ways to eat avocado. I'm kind of a minimalist who likes to keep things simple, so I expected more of the same. Boy, was I blown away by the responses! If you're not hungry after you read this, you must not be feeling well. I personally am planning to bake some avocados with eggs tomorrow for our "Breakfast for Dinner" night. I know avocado toast is a big thing right now, but unless you can find a good grain-free option, I wouldn't recommend it, myself. Try #6 instead.
- Cut in half, drizzle on some olive oil, salt and pepper. Everything but the Bagel seasoning is really good on it too. Spoon it right out of the shell and enjoy! It doesn't get much easier than that, and if you use a good quality pink Himalayan sea salt you are adding potassium and magnesium to your diet, as well.
- Cut in half, add some Frank's buffalo sauce or hot sauce to the center and grab your spoon.
- Cut in half and add a dollop of fresh salsa to the center. Again with the spoon.
- Sprinkle with lime juice and cayenne and enjoy
- Cut in half, crack an egg into the center, sprinkle a little feta on top, bake, and serve with hot sauce.
- Mash some avocado with fresh basil and lemon and top with a fried egg.
- Cut sweet potatoes thin and bake until crispy. Top with mashed avocado and sauerkraut. Bonus probiotics!
- Guacamole is my favorite all-time food! Mash an avocado, then mix with fresh tomatoes, cilantro, jalapenos, lime juice, garlic, salt, pepper and onions. You can also just mix in some fresh salsa--instant guac!
- Add to the inside of an omelet or on top of scrambled eggs.
- Mash an avocado with a tablespoon of olive oil and some salt and pepper, then mix with a can of wild caught tuna, and serve on a bed of dark leafy greens.
- Oops! Did I say 10? Bonus: for dessert...make chocolate avocado pudding:
Ingredients:
1 banana
1 ripe avocado
¼ cup coconut cream or milk
¼ cup raw cacao powder
Blend until creamy in your blender or food processor.
